Review: Cooking to near perfection - These cast iron pots and skillets are great! They do the cooking to near perfection. My advice is to take care of them as described being specific with the instructions provided. I kept these pans out and available with each one nesting with the provided paper that was with the product so they all fit together well. These are not suitable for acidic dishes nor leaving the lid on for too long after cooling thus creating condensation thereby potentially rusting the underside of the lid or even the exposed pot. It doesn’t matter while cooking or heating just afterwards. They are heavy as expected, safe using your favorite potholder, as well as are very versatile for so many dishes. Yesterday I braised, marinated and cooked short ribs, potatoes and carrots in another pan and cornbread in another size to create my own feast. Be creative and know you’ll get some iron added to your diet.

**Q: Mine got rusty from sitting around, what can I do about it , if anything : /**
A: Most important thing with CI cookware is keeping them 'seasoned'. An old one, I cleaned itwell, used a steel wool scratchier a few drops of dawn, totally dry, and covered the pot completely with a coat of Crisco. Turn Oven to 350° place rack on the lowest slot, put a heavy piece of foil there  Lay the pot/skillet in the oven upside down and 'bake ' for 1 hour.  Shut the oven off and leave in there until cool.   Now if it really rusty and you cannot remove the rust, Lodge says to take it to a Machine shop and have it sandblasted.  Quickly home, wash it  with hot water, a scrub brush and 1 drop of Dan, rinse and coast with Crisco and proceed as above.  Any questions contact Lodge www.lodgemfg.com or call CS at 423-837-7181.  Most important is when done using ..clean it out with hot water dry and coat with Crisco when it is still warm. I stack in the cabinet, using parchment paper liners between each pan/pot. Never use metal tools. Wood plastic or silicone.  Did this help??

**Q: When you grease the cookware how do you store it to keep the grease from becoming rancid?**
A: Don't "grease" your pan just use a very light coat of lard, bacon grease or crisco to season your pan after washing and drying well. Then place the pan in the oven at 450 for about an hour. Wipe about at 15 and 30 minutes into the baking process.

**Q: Does the skillet fit on top of the Dutch Oven as a lid? Could I put my bread dough on the skillet then the DO over that and have it sealed?**
A: Skillet will fit on top of dutch oven, not sure the seal is tight because the skillet has vents on the edge.  The lid that comes with the set fits both the skillet and the dutch oven.

**Q: What type of oil is used to season these pans? Is it soybean oil? (I'm allergic). Can these pans be purchased unseasoned? I prefer coconut oil.**
A: If you have a self cleaning oven, you can run the skillet through a cycle. It will burn all of the seasoning off and you can then redo the seasoning with the coconut oil. I've also read that some flaxseed oils can be good.
