Thus has been answered well, I am just adding that batoning is Not YouTube promoting task, I baton and others do as well In the WOODS, it is a great way to make kindling especially in damp times in the woods in the center of a 2-3 inch branch I much drier then twigs, break them down and shave the center and makes starting a fire much easier. YOU may not do it and think it 8s a "youtube promotion" and that's fine. Meanwhile, I'll continue to baton. Just my 2 cents. I also bring homemade Firestarter incase it is really damp.

Even though this is only a 3/4 tang is it significantly less durable as a full tang? How durrable is a 3/4 tang?

These as most moras are 3/4 length stick tang style blades. These knives can do alot and the truth is alot of full tang knives are skeletonized alot so full tang doesnt have a purpose then. So even if your looking for a full tang you better do research first. Mora makes an excelent full tang the garberg for 80.00 though but rember there is a tool for every job. Orignally mora were used in carpentry elctric and construction so they hold up as long as you do your part.

Would this knife be good for processing deer? If not which Mora would you suggest?

It would do just fine. I use my robust everyday and its a great all purpose knife.The only mora i wouldnt use to process deer would be the classic series just because of the smooth wood handles. They would probably get pretty slippery.

Is it a double-bevel?

Well it is not a chisel grind so it has a double bevel in that sense. Moras have a scandi grind meaning that they don't have a smaller secondary bevel but I'll tell you is on awesome knive for sure and very sharp
