Can anyone please tell me how much of this equals one envelope of dream whip?

I found two old “Dream Whip” recipes that reference one envelope of Dream Whip to be 5.2 ounces. Hope this helps.

Does this get hard in the freezer? Or does it stay soft like the topping on Carvel ice cream cakes?

I have never put it into the freezer. It is a whipped topping like Dream Whip. I add a 1/2 tsp of vanilla to it to add to the flavor.

It tasted horrible almost like powdered milk

This is not a heavy whipping cream which will have a heavier texture and a stronger vanilla taste. This is a dairy free light whipped topping. I see no reason why not add vanilla, in moderation, towards the end of mixing.

Can this be used to make a bettercream topping on a cake? Not a buttercream but the light fluffy whipped cream like topping that isn't so sugary?

It is a little sweeter than Dream Whip but definitely not sugary. You can make it as light and fluffy as you like by changing the amount of water that you put in it.
