Paleta (shoulder ham) is smaller and rounder than Jamon (back leg) that is why it cures much more quickly. It has also a bigger fat concentration that determines its sweeter and more aromatic flavor than Jamon. Jamon Iberico de Bellota is without any doubt the best ham in the World. Like Jamon Iberico it is made from Spain’s native black pigs, that is why is called Pata Negra (black leg), but the animals are selected only between the best free range specimens and only fatted for the last 3-4 months of its life with acorn (bellota). After that it is cured in the mountain under the watchful and experience eye of the ham masters. This makes the meat absolutely sweet, marbled in texture and with an unsurpassed aroma. Sliced thinly at room temperature and enjoy its amazing and unparalleled flavor and texture. Only comparable to the best caviar or the most unique champagne. All our Iberico Bellota Paletas belong to acorn feed, free range pigs and have been aged for at least 12 months, have USDA inspection and have the black hoof clipped to conform to USDA legislation.

So glad I found this product!
Came with a sturdy ham stand and an extremely sharp knife, both of which are essential. Weighed 12 pounds so it was on the high side of what they promised. Not all of that 12 pounds is meat, however. Now that I've cut into it, my guess is that only 40% of it will be the thin jamon meat we all probably imagine. Quite a bit of it is skin, fat, bone, and hard, dry meat that is difficult to enjoy -- although it can probably be used in a soup. So be prepared for that.Also, slicing it paper-thin is probably not something you will be able to do on your first try.All that being said, I did my best and that was good enough for my appreciative family. We had a delightful meal together at the dinner table. Bagel crisps, olives, ice cold Coors Light, and jamon. With Spanish guitar from Pandora and the beach of Hilton Head Island across the street. It was almost like being in Cadiz again.

It was on the lower expected pounds, 10.4 lb. and it was the last one, and quite dry, the next time we will purchase the Jamon Pata Negra de Bellota.
