Review: The right tool for the job - Opening oysters with a pocket knife is dangerous. But, buying a proper and safe oyster knife proved to be quite the journey. There are all sorts of lengths and handles and blade shapes, many with regional names to honor the type of oysters found in those area. Oysters in stores come from all over the country and vary greatly in size. This knife got good reviews and I figured that safety-wise it might be better to get a shorter knife. I used it on two kinds of oysters, big ones from one store and some small ones at another market. It works great and is safe to operate as possible (there are mechanical hands-off contraptions to shuck oysters, but that would be wrong...). Hard to see in the illustration, the tip has an upward curve much like the end of a pry bar. You wiggle the tip into the hinge and then pry up and it just pops right open. The reason some knifes are longer is so that they will reach the upper and lower muscle attachment points so that the innards are disengaged from the shell. Since this attachments on even the pretty big oysters I had are only an inch inside the side of the shell, on the inside curved side, there is no need for a longer knife unless you want to do this from the end. Obviously some people find that easier or faster, but this is ok for me as I am not shucking hundreds of oysters. The handle is wood, shapely and comfortable. I hand wash it. Made in the US. Not the cheapest or most expensive knife out there. Perfect for me, so all five stars. It is smart to use protective gloves and I have a review of a pair.
