Product description About Old School Brand David Hinson (1955-2010) started Old School Mill, Inc. in the early 1990’s with an interest in foods, “ prepared in the ways passed down from the old school .” This quest for authenticity in producing the foods led David to construct a molasses mill later with the notion that the molasses had been produced exactly as it would have been produced by his ancestors . David’s interest in antique foods led him to purchase and make operational an antique grist mill . Drawing on the expertise of old-time millers, David learned the fine art of stone grinding grains into wonderfully pure meals, flours, and grits . Since those first products were made Old School Brand has developed a line of foods and mixes that bring back all the rich goodness and flavor of centuries ago. Today, David’s wife Robin and son Parker , along with valued friends, continue to operate the business with utmost care and the attention to the detail that David insisted upon. The Old School Brand goal is that you find these products unique and made to the highest quality. NON-GMO Corn Old School Brand corn (shown in this photo) is grown and harvested on the Old School Brand family farm. With over 75 acres of farm land producing NON-GMO White Corn, Old School Brand grits are made from the highest quality corn. The Mill - Where The Products Come To Life Old School Mill takes authentic antique ingredients and in a combination of mixing and grinding, turns them into the product(s) you enjoy. The mill was built years ago by David Hinson, using machinery from a 1954 Meadows Mills Meal Monster. Today, his son, Parker continues grinding and milling the products you know as Old School Brand products. The lead feature of the mill is the way products are ground: on two 450 pound millstones. Dave's Old School Brand Shrimp 'N' Grits Recipe 2 cups Old School Brand Grits. 8 cups water. 4 oz. chicken base. 1 stick of real butter. 8 oz. cream cheese, softened 1 cup dried chives (Dave always said use plenty) 1 lb. precooked salad style shrimp Bring water to boil in a large saucepan. Stir in chicken base and grits. Reduce heat and cook 35-40 minutes, stirring occasionally. Remove from heat and add butter, cream cheese and chives. Stir until ingredients mix well with grits Rinse shrimp and gently fold into grits mixture. Lastly, Enjoy! Review: Incredible grits! - I was really worried, since I read tons of reviews for "non-quick" grits, and they were all over the map. Old School were the only ones that had mostly positive reviews. Cooking grits for 60 minutes or more won't work for me. I have a life to live. Even on a weekend. But cooking these for 30 minutes? Decent amount of time, and first time out, I got the best grits I've ever had. Great flavor, creamy, with nice body. Married well with butter and salt. And DEFINITELY two steps up from typical Quaker or Albers Quick (5-minute) grits. (Those are good in a pinch. But don't ever waste your time with Instant Grits. YUCK.) I love to put some of Emeril's Essence seasoning on these and they become transcendent. Stirred every 5 minutes or so to perfection. I also let the leftover grits cool and I formed them into patties and fried them. Wow. It was like popcorn cakes. I'm very very very very happy with these grits.

These grits have a very coarse texture that real stone grinding gives and has the delicious depth of flavor that modern grits no longer have. Definitely worth the 30 minutes cooking time. They remind me of the grits that my grandma used to make.
