These small flavored anise drops have been made in France since the 17th century. The base of the Flavigny candy is anise. The Anise used is an umbelliferous plant and its small oval fruits, striated longitudinally, have a warm, spicy flavor and a remarkably aromatic scent. Then Flavigny places the seeds in large pans and pour sugar syrup (water and sugar) over them. The seeds roll over one another and gradually become covered in fine successive layers of syrup, kind of like snowballs tumbling down a snowy hill. This rotation in pans also makes the candies become smooth, like stones that are rolled on the beach by the incessant waves of the sea. The process involves delicate, patient work; the candy-maker needs 15 days to transform the small seed that weighs barely two milligrams into a one-gram candy. Of course that's a big change over the ancient process that took 6 months! The taste for anise-flavored beverages was introduced to the shores of the Mediterranean in ancient times, during the Turkish and Hellenic domination. The cultivation of anise then gradually expanded to the entire Mediterranean area. The natural flavors are extracted from plants by steam or alcohol distillation. For mint, for example, the leaves are placed in a still, and then the water is heated. The steam that is formed crosses through the leaves and is impregnated with mint essential oil. The essential oil is recovered, after passing through the goose-neck, when the conduit crosses through a bath of cold water. Review: Tasty small hard candies - I absolutely love these I never knew they came in larger bags I only ever saw them at a high end grocery store. I don't live near any high end stores anymore and am super happy to have these is a larger quantity for a much price. The flavor is sweet and floral but not overwhelmingly so. Review: The best violet candies in existence - One of my all time favorite candies from my childhood. So beautifully flavored that I have to really have some self control with the big bag. Mmmmm mmmm. We love the Rose and Orange Blossom as well but the Violet will always be my favorite

Delicious
These are delicious. I buy the smaller tins and refill them with these. Used to eat them in Spain when I was young. It’s wonderful to see that they still make them and are available here.

A surprise inside!
I love these pastilles. It might seem strange to think of eating something that is lavender, violet, or rose flavored, even though flower-infused sugars and other baking ingredients are currently popular, as well as edible flowers, these little candies with the anise seed in the center are wonderfully refreshing. Years ago, I found it hard to find them, even at Cost Plus World Market that seemed to have every imaginable candy around. When I saw them here, I was so excited. Took me back to high school!

Yummy old man candy
My mom kept these in her nightstand when I was a kid. They are from France. They remind me of growing up and getting a special treat. The taste isn't for everybody -- I mean, VIOLET candy? With a licorice seed in the middle? But I love them. They are comforting and wonderful. But the price is a bit steep.

perfect violet flavor
Heres the thing about these candies though. Due to the way they are made - which takes something like a month or 2 of slowly adding more sugar coating to the anise seed until its the right size- they are incredibly hard. There isnt a word for the hardness of them. So if you cant control yourself and must bite into one, expect to break a tooth or lose a filling. Seriously. My BIL cracked his tooth on one and had to go to the dentist, I have broken off a piece of tooth, pretty much everyone has a sob story about their teeth and these candies. But they werent meant to be chewed. Literally you can have ONE and it lasts a long time, has amazing violet flavor and you dont.chew.til.you.get.to.the.seed! And then youll be ok. They are my favorite candy, along with the rose and lemon. The lemon is my least favorite, but I like to have a lemon one with a floral one for a perfect flavor.
