I think it says they are 7 and a half inches long, but the one I measured is actually 7 and three-quarter inches long.

can it be used for slush and is it big enough that it wont sink in a 16 oz cup?

The straws can be used for slush, however the straws are only about 8 inches long, so they could potentially be too short for a 16 ounce cup.

What is the diameter of these straws?

They are 1/4 of an inch in diameter, and almost 8" long, which includes the little spoon/scoop end.
