Is this product GMO free?

I found your answer here http://www.foodpreserving.org/2013/07/clearjel-canned-fruit-pie-fillings.html?m=1 GMO: ClearJel is not labelled as GMO, however manufacturers have stated there is no corn DNA present when testing ClearJel - so ClearJel technicallydoesn't contain GMO after manufacturing. However, seeing as ClearJel is made from USA-grown corn (which 95% is GMO), more than likely ClearJel is made from GMO corn.

difference between instant and regular clear jel

Instant clearjel sets up without heat good for fresh fruit pies and should only be baked once. (You can microwave the pie for reheating, but that's it.) So if you were making pie filling for canning, you would have to use the regular because first you cook the filling then you would bake it in the pie.

is this instant gel made vegetarian or with animal

Vegetarian. It's made from corn. Any Modified starch u can "easily" find online should be vegetarian

Does it come with directions?

Comes with a recipe on back label calling for 1/4 C Clear Jel to 1 C sugar. It is Modified Cornstarch. Use it to replace other thickeners, the results is a more clear & shiny product. I use it mixed with what sugar I'm putting into my recipe, pies, cobblers, things like that.
