Does it come w/ 2 blades and if so what are the dimensions?

Yes, there are 2 blades- one is 5 and 1/2" with enter circle is --2" Other is 4" enter circle 1 and 5/8. I just use my old fan after cleaning it. Hope this helps.

Can it be used for my kitchen fan

It is a universal motor and can be used. It comes with two blade sizes and some adapters. Bath fans, kitchen fans, vent hoods. I used it for an air purifier. I have bought two of them so far.

Does its rotor rotate clockwise direction!?

Yes, you can reverse the direction by removing the bearings and installing them with the shaft facing the apposite side.

Would the fan blades hold up in a food dehydrator next to the heating element?

No they are pkastic you want metal blades
