No, you cannot use these with chocolate. They are water/gel based. You need "candy colors" oil based to use with chocolate or candy melts. Or use candy melts, they are oil based.

Americolor is my go to brand from gel food coloring. I use it in my royal icing. It colors quickly and one bottle will last you a long time. It does stain your skin so just be aware of that. This is a good value for your money.,
