What is the difference between the cheap ones?

I own these but don't understand the question. These are microwave and ovenproof and made of porcelain. I bake individual portions in them in addition to using for dipping sauces etc.

Would these be big enough for taco fixings for 2-4 people or would the 8 oz be better?

It might work for 2 people, but I'm going to say the 8 oz would be a safer bet for 4 people, unless you like the fixings really "light". These are definitely not large enough for the taco meat for 4 (though I'm not sure if you consider that to be a "fixing"). Great idea, though!!

the diameter of the bottom or the foot of the dish is 1.25 inch. It holds 1/4 cup of water.

would these be big enough to serve individual servings of meat for fondue?

It would definitely be big enough for a meat portion for me, but I am not a huge carnivore. Maybe have a few extra portions available for those with larger appetites. Love this idea!
