## Description

Easy to use, makes great bread of all kinds. Rises really fast.

Review: Baking Bliss With Any Yeast - I recently purchased for the first time Red Star Platinum Yeast, and I've achieved great results with it. I've baked small loaves of bread, intricate baguettes, and fougasse with Caraway seeds; this Yeast performed nicely every time. The quick rise times and reliable performance make this Yeast an ideal choice for novice and experienced bakers alike. It lends a beautiful depth of flavor to my loaves and has made my baguettes and fougasse taste as a professional baker crafted them. Delectable! Some say Red Star Platinum Yeast is worth the additional cost compared to Regular Yeast. It has a longer shelf life and does not require proofing, which can save time and effort in the baking process, and it also produces a consistent and fast-rising dough. But why is Red Star Platinum Yeast performing better when proofing, although it is an instant yeast? Red Star Platinum Yeast contains dough enhancers and ascorbic acid, which promote better yeast activity and gluten development. This combination allows the yeast to produce more carbon dioxide gas during proofing, resulting in a higher rise and a more open crumb in the final baked product. Regardless, proofing Red Star Platinum Yeast is bakers' best secret. The dough enhancers also make the dough more resilient, meaning that it can tolerate longer fermentation times without over-fermenting or collapsing. These factors contribute to the better performance of the Red Star Platinum Yeast when proofing despite its classification as an instant yeast. Yes, proofing is a crucial step in the bread-making process that can significantly affect the texture, flavor, and overall quality of the final product. It is also true that all yeast, including instant yeast, performs well when proofing as long as it is appropriately stored and within the expiration date. Yeast has a limited shelf life, typically between 6 and 12 months, and can lose potency if exposed to heat, moisture, or air. The cost of a product, in this case- Red Star Platinum Yeast, does not always correlate with its effectiveness, and there are often affordable alternatives that can still deliver high-quality results. Speaking about yeast, it is true that any yeast can produce bread and make it rise. Ultimately, choosing between expensive and affordable products such as yeast depends on personal preferences, needs, and budget. Yes, promoting and marketing products like Yeast can influence consumer perception and purchasing decisions. However, In general speaking, expensive products are not always necessary to achieve good results. Many affordable products offer excellent performance and quality. In conclusion, baking success can be achieved with any yeast, whether it is active dry yeast, instant yeast, or fresh yeast. Each type of yeast has unique characteristics that can impact the baking process, but with the proper knowledge and techniques, you can create delicious baked goods each time. It is essential to follow the steps correctly, choose your yeast, and consider factors such as rise time and proofing. Experimentation, practice, and attention to detail can all help in achieving baking bliss with any yeast. Happy baking!
Review: VERY GOOD YEAST GOOD PRODUCT BUT A LITTLE BIT EXPENSIVE - I bake bread very often and have purchased several types of instant and active yeast... the big difference, in my personal opinion, is that this yeast works extremely well with the flour. That is, it's more potent than the others, but so is its price; it's not as cheap as the others. But at the same time, you don't need to use an entire packet to make a loaf of bread; just a couple of grams for 1.2 kilos of flour is enough, and I'd venture to say that just a pinch of it is enough. Some people believe that because they use more yeast, the bread turns out much better, but what they don't know is that they're eating yeast instead of bread... and all this perhaps because it helps the bread rise faster. Everything has its time. That is, if you make bread and don't give it the time it needs to develop, then you'll end up with a stale bread. However, if you use too much dry yeast, which is much stronger than compact or fresh yeast, then what you'll end up with is a dough that rises super fast in just a few minutes, and you're speeding up the rising process. So, for everything to be understood, it takes time and patience. And I repeat, it's not necessary to use 8 grams of instant or active dry yeast for half a kilo of flour; just one gram is enough... give the dough time to rise, let it do its job, and then move on to the rest... Rushing when making bread isn't good, and many people overuse YEAST. This isn't very good, to say the least. I've seen videos that use 8 grams of dry yeast for 400 grams of flour, which is AWFUL. No matter how cold it is in your country, state, or province, or wherever you live, you shouldn't use that abysmal amount for 1.2 kilos of flour. Dry yeast is super strong, and the calculation is correct. If the recipe calls for 1 kilo of flour, 2 to 2.5% fresh yeast, in other words, 25 grams, and at the same time, with only 6 or 6.5 grams of dry yeast, you have enough... that is, a third compared to compact or fresh yeast. But here with this type of yeast, which is much stronger than the others, I would say that in 1.2 kilos of flour, one or two grams is super enough... I hope you like the review... and I should add that I've been making bread for many years. Good luck..to you and if you want a good yeast you have it...this one is a super yeast.

## Questions & Answers

**Q: If use by July 2019, can I still use to make rolls?**
A: I suspect so but let your proofing be the judge

**Q: What is the expiration date?**
A: March 2022 and it works great!! I tried it making homemade donuts for the 1st time & they turned out soft & sooo delish

**Q: It's now January 2022, does the yeast being sold still have an expiration date of March 2022, as mentioned in a previous question?**
A: I have noticed this too, but I think they make a large batch of yeast with the same expiration date and then don't make another batch until it's closer to the time (March 2022). I use mine up so fast, it doesn't really matter to me, but I am sure you are concerned. I guess I would only buy one 3 pack so you are current.

**Q: what are the dough enhancers?**
A: It works instant, ingredients yeast, Xanthan Gum, Ascorbic Acid, Sorbitan Monostearate,Enzymes, contains wheat, (Lesaffre)
