Yes, the hdmi out cable will carry sound.

Will this and this https://www.amazon.com/gp/aw/d/b0049scb2y/ref=ya_st_dp_summary give me 5.1 surround?

I have the extractor and a similar HDMI switch and it does a good job of decoding the surround sound data from the HDMI. It does seem to be limited to 5.1 though but for me this isn't a problem right now.
