If I use a ssd that is rated for 5gb/s read and write will this limit it? If yes then ate what speed will it limit my ssd to?

The case usb-C chip can manage upto 10Gbps so 5gbps is no issue . If you have above 10gbps nvem drive ,It will be limited to 10gb
