What kind of dates are used in the date sugar (hallawi, Medjool, zahidi, etc)?

Why does syrup have more calories than the sugar?

Hello, great question! To put it simply, there are more dates in the same volume (or measurement) of date syrup than in date sugar. It could mostly be explained by the difference in texture because of production method. Date sugar has virtually no moisture remaining, is bulkier and contains fibers and solids from the date that aren’t necessarily caloric. Date syrup is purely the nutrient rich nectar from the date.

Can this be used in making bread? Or will the yeast not react the same way to this as it does to table sugar?

I've not used it in making bread. But I've used it to make muffins, biscotti & it reacts the same as sugar. I use it exclusively now rather than sugar ;)
