A: OK, I'm reading straight off the back of the carton:

Fat: 87.3g, of which saturates: 42.0g.  Carbohydrate: 9.3g, of which sugars, <0.5g.  Fibre: <0.5g   Protein: 1.4g  Salt: <0.01g

All of this is "per 100g as sold."  


Hope this helps.  Suet is basiclaly FAT (kidney fat) but it really is indispensable for things like English-style steamed puddings.
