Ernst Birnbaum wood pulp Bannetons, Brotforms, Dough Rising Baskets (1000g, 9" round, lined)

Having used this 9” round banneton for over 1 ½ years, I can say it is definitely worth the investment! It always delivers a lovely shaped loaf but since I sometimes make two loaves on the same day I tired of using a floured tea towel in a regular bowl and decided to invest in a 2nd 9” round! It arrived and looks just as lovely as my first one. I did research the many bannetons out there and believe this one is the best and no messy fabric covers to clean up. Thanks for such a wonderful product!

First let me say, I like this banneton. It is well made. That said I have always used ratan bannetons. This one works differently on my dough. It wicks away much more moisture from my dough than my ratan bannetons do. When I turned out the dough it had formed a very stiff crust. Just be aware of this, it might be fine with the type of dough that you make. I use a lower hydration recipe (about 68%) and so any excess moisture loss will in the refrigerator can negatively effect the dough. I just don’t think these are for me.

These are awesome. I purchased one to try it out and have since purchased another for when I want to make two loaves at the same time. These are much sturdier than the other kinds of wooden baskets you see around amazon and I can see them lasting me a long time. Very happy with them and would recommend to anyone who likes making bread boules.

I thought the banneton was pricey, and then I used it. Bam- dough released with just a wiggle, this wood pulp product is so much better than cane bannetons its ridiculous. Don't need to use much flour to coat the inside, and it's an easy product to dry / clean. Such a great product that we had to get another one!
