Product description We are the Farmer, the Miller, and the Baker working together to preserve American farmland for tomorrow while providing the highest quality flour and grains to the bakers of today. Our company is built on generations of knowledge - dating back over 150 years when flour was an essential staple of daily life and organic was the only way to grow. We are proud to be employee owned & operated , which means we are personally invested in the quality of our products and our relationships with suppliers and customers like you. Product Description Organic 100% Whole Spelt Flour Spelt, also known as Farro Grande, is an incredibly ๏ฌavorful grain that originates in the area between the Black Sea and the Caspian Sea. Spelt has similar baking characteristics to wheat but can be easier to digest than wheat thanks to its higher water solubility. Whole Spelt Flour can be a great substitute for whole wheat in most baking applications. Our Organic Spelt is grown in the Northern United States and is milled 100% whole with a slow and cool process that retains the rich ๏ฌavor of the grain. What does it mean if a flour says it is โmaltedโ? โMaltedโ means that a very small amount of Organic Malted Barley Flour, Malted Barley Flour, or a natural enzyme has been added to the flour to stabilize fermentation. The โMaltโ also helps with coloring in yeast risen products. Is your flour bromated? Never! None of the products made by Central Milling are bromated. Is your Organic or Commercial Flour Non-GMO? All wheat flour produced by Central Milling is Non-GMO. In fact, currently the US has not approved any GMO wheat for sale. What is โashโ and why would I want it in my flour? Every wonder what those little specs in your flour are? Those are bits of the bran and the germ that are intentionally left in the flour to increase the flavor, nutrition, and look of the flour. The higher the number, the closer to whole grain the flour is. A number in the name of a flour is an indication of the ash content of that flour. For example, Type 70 is a 70 ash and Type 80 is an 80 ash. This naming convention is the way some common types of flour are named in France. Fantastic flour for bread
I bake sourdough bread primarily and rye bread. When making a "light" rye I like to use a mix of bread flour and rye. I have used King Arthur brand for years and it is a good product. But I found this and wanted to give it a try. I liked it so much I bought a second bag! (I bake bread weekly.) With the $10 off coupon that was great on this second bag I got. The flour itself produces a good quality, great tasting loaf of bread. The flour is fresh and the bags I received have a substantial shelf life into 2022. Stored properly it will keep well. You can bag it up and store in the freezer or if you have a cool, dark storage area, that works well too. The first bag I got the bag was within another huge plastic bag which was great. The second bag was not packaged that way, but no rips, tears or punctures in the bag. It's very thick paper, multiple layers, very sturdy. I highly recommend this product.

Now, THIS is flour!
When I opened the bag, my first impression was the fragrance. Then the color. Both are uniquely rich and very different from traditional 'store bought' flours. I made two sourdough loaves. This flour developed gluten from the second stretch and fold; the store bought flours take longer to develop their gluten matrix. Oven spring almost push the lid off the Dutch oven- seriously. I've used KA, GM, my own combinations of wheat, spelt and store bought 'bread' whites and nothing can compare to this flour. If you read this and don't try a bag, you're definitely missing an experience. At $2/# it a bit 'pricey' by comparison and if buying it in 50# or 100# quantities reduced the price, it would be my go to flour. I may try cutting it with KA at a 50/50 ratio. If you make sourdough, you know that every loaf is an experiment, for sure. But in no uncertain terms, this flour is different and in a very positive way. Not sure 'Wow' is an appropriate description for flour, but for this one...WOW!

This product came as expected. I have been trying all sort of flours for home made bread. I also have been using this flour for other baking needs such as cookies. This flour make soft pillowy smooth cookies and bread. I am going to try for Artisan Crust next time. Clean taste and pic was with quick acting yeast. No starter so tasted clean. I will buy again.
