If you try to form balls right after mixing in the water, the falafal is soft and slightly sticky. When when you drop it into the oil to fry, the balls frequently disintegrate into fine granules. You can fry the granules until light brown and fish them out of the oil with a spoon and drain on a paper towel and they still taste great. But it's not the falafel balls you were going for. I refrigerate the mix for at least 2 hours and fry in olive oil. Make sure the oil is smoking hot when you drop the falafel in. If it's not hot enough, that will also cause the falafal balls to disintegrate, resulting in the fine granules. Refrigeration of the mix and very hot oil seem to be the secrets for successful falafel balls.
