how big is the box? how many oz. of salt?

I weighed it for you. The box holds 8.8 oz of fine salt which is approximately 3/4 of a cup.

How do these work at keeping humidity out? I live in Hawaii and it is a constant problem with ALL of my spices.

It gets quite humid where I live in the summers (perhaps not as humid as the Pune region of Hawaii), but the salt never was affected by dampness. I think it might be because the box is made of bamboo, which is not coated with urethane or some other humidity-blocking varnish, so that it allows the wood to absorb some of the dampness in the air, thus keeping the salt drier.

Why can't this be shipped to California?
