Hello! Yes, you can control how hot the sauce is. There is a Scoville chart that tells you the spice level of each pepper. Also, each recipe specifies the heat level. Hope this helps!

How long will this gift be good for. want to give it for christmas. bought in august.

It will definitely be fine. I bought mine back in January and just made another batch two weeks ago. All the peppers are dried so if the box is kept on a cool dry place you should have no problems.

How quickly do you have to make the hot sauce because of fresh peppers?

The peppers are dried. I would say they have 3 months of shelf life. Possibly 6. You can always soak them in water to rehydrate them though.
