Do the items become discolored after multiple uses, especially if do need to use oil...and are they sufficiently nonstick without using oil or butter?

I have been using these about 3 months and they are great for no stick and great for browning. I have had no discoloration. The instructions specifically state NOT to use any spray on non-stick coatings. I have had good luck with butter and parchment lining before baking but also used the cookie sheet with NO coatings and it worked just fine. I wash these by hand.very easy clean up.

Can I put these in the freezer?

I have put the baking sheet in the freezer to quick-freeze strawberries or blueberries, and have seen no ill effects to the sheet. Love the muffin tin, in particular, for its wide grip edges. No more spilled batter or fingers in the muffins!

Can you line these trees with aluminum foil?

Yes. I have cooked sheet pan meals on the baking sheet with a foil liner.

Just received my set and the manufacturer says, do not use "cooking oil sprays." Does that mean "do not grease at all?"

I never put grease or oil on my pans. If I’m concerned about sticking which things really don’t stick, I would use parchment paper
