Would these work for spark plugs?

Unfortunately I don't think they are going to work with spark plugs as they are not deep enough.

Will this work for removing rounded weel bolts?

It could help removing rounded whee bolts providing there is enough room for them to fit inside the recess in the wheel. However if you’re wanting to remove damaged locking wheel bolts then it all depends on the style of locker, some locking wheel bolts have a spinning collar around them to stop you from hitting a socket over to remove in order to prevent theft.

Will this work on a E18 Torx Bolt?

This products should still bite into the Torx bolt, you want a tight fit. knock the nut remover on with a hammer for tight fit. There should be enough thread to bite into! I would give it a go! Saved me £££ removing my locking wheel nuts! If you live near Chesterfield come and try my set 😉

I have to remove a brake bleeder screw. The bleed part of the screw sits higher than the nut. Will the set heads have enough space inside for this?

I bought these because I have a set of Erwin rounded bolt/nut removers in my box at work but my Erwin set didn’t have many sizes in. They are the exact same design as the erwins and although I haven’t used these ones yet, I have used the erwins to remove bleeder screws from brake callipers. As a technician it’s something I have to deal with on a daily basis so I’d also recommend some good penetrating fluid and/or some heat. A small blow torch, heat gun or even a wind proof lighter can also make life easier. I hope this helps and best of luck removing the bleeder as I know what a pain they can be.
