Despite previous answers, mine has clearance channels on both sides (300 & 1000). I suspect this is due to model # differences. Contact Trend directly to clear this up. **Q: Must you use a lubricating fluid or can you sharpen with the stone dry?** A: The fluid is important to take the removed metal away and reduce friction. The plate itself is stainless steel with nickel plating, so it will not rust, but any residue from the item being sharpened will rust if it is allowed to remain on the plate, so remove it. I use an all purpose cleaner like Simple Green as both the cutting fluid and the cleaner. Just hold the plate under running water and dry it carefully. **Q: Which is the best brand in quality out there? trend, ultra sharp, atoma, or another? this seems to be middle of road in price?** A: I can't personally speak to the other brands, but I do use this one every day. All those brands have someone I trust backing them, so buy one with the price you like, and when it arrives take it out and check it back and forth for absolute dead-flatness on both sides. if it looks even slightly dished or bowed, send it back (this is a defective stone) and try again. There is a lot of marketing jargon out there (as I'm sure you're aware) which is usually a tip-off that they're all the same.
