Why would anyone spend $104 on this when there are a ton available for way less?

Because this is a high quality Chief mount, not a piece of garbage which is what most mounts are. This one is FAR more adjustable, it stays in place once adjusted, and the design means it won't fall on your head and destroy your $500+ projector.

Will this work with the epson 2045

As long as the underside of the projector has at least 3 mounting screw holes you can adjust the mounting arms to fit. It will just take some adjusting on your part.
