Are the edges a selvedge edge, or are they cut, or are they sewn? My couche is starting to ravel on the cut edges which are not finished.

It is made in France. Made from 100% natural linen fiber. It states that it NEVER BE WASHED !!. Just shake it out. Scrape off any stuck on dough abd let air dry completely.

Why should I get this instead of a banneton?

Bannetons and couches are for different purposes. A banneton is used for a bread form, like a bouley, but the couche is used to help baguettes, ciabatta, et al retain their shape as they proof.

Can you wash before the couche before the first use? I would like clean before I start

No; it is not to be washed. after using, one just shakes it out and air drys it. if you wash it, you will ruin the characteristics of the cloth serving the purpose for which it was uniquely woven. Mine is from France and i can speak for that item uniquely.
