Is this easy to open? The black box type is very difficult for me to open because I don’t have a lot of strength in my hands.

It seemed pretty easy, and I am an older person.

Will this fit the type of key that has the black plastic head ? (not a remote key just has the larger plastic head)

I have a car key 2 7/8 X 1 1/4 that fits into it easily.

Will it hold a keyfob?

Probably not. I think it's meant to hold just a key alone.

Can I go swimming with this? I plan to put my thin apartment key fob in it and attach to my swimsuit as I do my laps in the pool

My best answer is 'maybe'. The hide your key gadget will not normally be fully imersed like your swimming pool idea. That said the cover won't likely leak if only immersed for a few inches. Best idea--tryit--but don't if your key or other item just really shouldn't get soggy at all. The Hideout is not designed for longer term submersion. I've used a hideout for years without a leak when using it as intended. Peronally I wouldn't put an expense beep type of key as your described.
