How does rolling a bearing without a shield on it make it faster than the G3? What is the advantage?

Being sheildless isn't what makes them faster than the G3. They're just a better bearing. Think Super Reds vs Swiss. Not having shields makes them easier to clean and lube; which is a definite plus if your a street skater.

whats the mm? 7mm or 8mm?

These are standard size 608 bearings. Which is the industry standard for skateboards. The inner hole is 8mm. The width is 7mm. And the total outside diameter is 22mm. These will fit any truck/ wheel combination you can buy in the United States.

Are these "waterproof"? As in, can I ride these in the rain without worrying about ruining them?

Water is never great for any bearings as it causes rust. If you get them wet, simply ride or spin them until the all water has been removed. Since they have no shields the water does tend to dry out faster from these bearings. Hope this helps!
