Review: Awesome cookie sheet. Make sure it is put away dry... Accidently left on a tea towel that was barely moist for 1 day and bottom spot rusted, my mistake.
Review: Pros: Really lovely for baking pastries. The low curved lip makes it easy to slide parchment paper off. The sheets feel very solid, which is to be expected as they're a slab of steel. No warping issues. Cons: The European sizing (40x30cm) means they're a little smaller than standard half sheets. Standard US cooling racks and silicone baking mats don't quite fit right. These are black steel, so they require seasoning much like a cast iron pan. Matfer Bourgeat's website refers you to a good Cooks Illustrated article on seasoning. It's not a lot of a work to keep it clean and oiled. If you stick it in the sink and scrub it down with soap without oiling it, it's going to get rusty. I have two of these now and would buy them again.

**Q: Is this the "black Iron" baking sheet that Martha Stewart uses?**
A: No these are slightly different. The ones she used you can purchase at JB Prince in New York and online for about half the price of these.  Get the black steel HALF sheets. Good luck

**Q: Does the sheet need to be heated in the oven prior to putting pizza dough on-or can you put in the oven without heating up?**
A: You will get a more crispy crust if you heat it up first.  I would almost treat it like a pizza stone.  Make sure you have well seasoned it like you would a cast iron pan.  Good luck.  Mine has been a big disappointment.

**Q: Do you use steelwool to clean it?**
A: I was very dissatisfied with this sheet.  I used it once, had terrible results, and returned it.  However, had I kept it, I would not have used steelwool on it.

**Q: How much does one of these pans weigh?**
A: Hey there! While I don't know the exact weight, they are not light. But with weight comes durability.  They are some of the best pans I own and highly recommend them as a professional Chef! They must be kept dry when not in use
