Will this adhere to plastics to form a gasket

Yes, asssuming the substrate is clean. Please make sure that blue is the strength rating you want as it is one of the weakest "less permanent" types of gasket maker.

I intend to use this to repair a pentair 2" multiport valve spider gasket. will i be able to take the valve apart again if needed after using this?

You do need to be careful applying this product as it sets up quick & is very messy, so make sre you have a rag nearby. I think I may have put too much on & would spply it more sparingly. There are Youtube videos showing proper installation. You can remove the top of the valve for inspection, however, it may be difficult to remove the gasket without damaging it & it would be more difficult to clean the the gasket than to teplace it with a new one. Once it is on, there should be no need to remove it.
