If your rag is picking up brown stuff, you're cleaning the coating. It will take some time and elbow grease. **Q: Can I use this for roast chicken or pork?** A: Yeah, I don't see why not as long as the meat fits. USA Pan recommends lining the pan with foil or a baking mat when roasting meats or veggies. **Q: What's the difference between this 9"x13" USA pan and the quick release one?** A: I bought this pan because it had the handles for easy lifting. I have not used it yet, but it has the same coating as the other pan to make release easier. I still spray the USA loaf pans that I use for baking bread. I will spray the 9 x 13 pan when I finally use it. Old habits die hard. 😉. I will always bake my cookies on the Silpat silicon baking mats even though the cookie sheets are also quick release. (And for cookies the baking time is one minute fewer than my AirBake cookie sheets that I replaced with the USA product.) What I see as the major difference is in the corners. The pan with the handles have corners that are more rounded. The other pan has corners with folded metal resulting in cakes and brownies with sharper and straighter corners. That would provide a more professional appearance in the baked goods. As a tip, after washing my USA pans (no abrasives- even Bon Ami!), I drain the water and return the pan to the oven that is still warm. When the water has evaporated I let the pans cool on the stove and then store them. **Q: Is there a lid available for the 9x13 pan?** A: They do have a lid. You’ll have to buy it direct from USA Pans as I don’t see them on amazon.
