This is a fantastic 2000/3000 grit ceramic hone and I couldn't be more satisfied. I've been looking for a replacement for my Wusthof grooved steel hone which is too aggressive and does not maintain my extremely sharp edges on my Wusthof knifes. Ideally, very fine sharp knife edges need to be maintained with honing before each use or when you notice a loss of sharpness. A hone doesn't really sharpen knives, they maintain sharpness by straightening the edge and/or by putting on (sharpening) a tiny micro bevel. I would recommend the white hone if you need a hone that will be more aggressive in its ability to do minor sharpening. Get the black hone if you want to maintain your freshly sharpened knives at a very high level. I recently started learning how to sharpening my own knives at a very high level. A have a Sharp PT50B tester to measure sharpness. Scores in the 50-100 range are extremely sharp (scary sharp), Scores 100-200 are a pleasure to use and scores in the 200-300 are typical of new high end knives. My knives consistently measure in the 50-100 range after sharpening which are scary sharp. However, after several uses, especially with a cutting board, they will often measure in the 200-250 range. Still very sharp, but not a pleasure to use as compared to the initial sharpening. After using this hone (20-30 strokes per side) I'm back to getting sharpness scores in the 140-160 range. If the knife has been really worked over, then I will do 5 to 20 strokes with the "coarse/grooved" part of the hone to more aggressively recreate the micro bevel. I'm very satisfied with this purchase. I now have a way to maintain/restore the sharpness on my knives between sharpening. Exactly what I was looking for.

I've been collecting and professionally writing about knives and sharpeners for many years. My first impression of this ceramic sharpening rod was it's looks. It comes in a beautiful black box and is very long, looks expensive. This would make a great gift! Also I see many people complaining about their white ceramic rods getting grey streaks.... That is the steel from your knife being imbedded in the ceramic, it's normal part of removing since steel from your edge. A ceramic sharpening rod is different from a steel honing rod. A steel honing rod just re-aligns the cert edge of your blade so that the edge no longer has slight deviations in it, the steel rod another the edge so that instead of looking like this with microscopic misalignments --_----__-- your edge is straight and aligned like this ---------- so it cuts better. A ceramic sharpening rod not only aligns the edge but also removes a little bit of steel to sharpen AND align the knife edge. What many people will like about this BLACK CERAMIC rod is that it does not show any grey streaks like the white ceramics do. I love the ceramic so far. There are grooves on each "side" of the cylindrical rod. I have personally found that these types of grooves leave microscopic serrations on the edge, which greatly improved slicing cuts. There are two types of cutting to consider when choosing your edge:. A pretty smooth edge like a razor is good for push-cutting, like chopping vegetables straight through. A slightly serrated edge is best to "bite" into the material as you slice with the edge instead of just push. I prefer to hone my edge with the smooth part of the rod to align the edge of my knife until it shaves hair with a push-cut, then finish up with with a few strops on the ridged grooves of the rod to put some micro-serrations on the edge. The handle is very comfortable and ergonomic. The plastic has a tiny bit of seams on it from the injection mold, which is the only thing about this tool that looks a little cheap. But it feels and works great! The rod is very long. And again, being all black, looks elegant. I think this would be a great gift! For the price, this looks far more expensive than it is. It's a great bargain! Made in Japan and Taiwan. These are my first impressions. I will write more if I encounter any issues.
