I also move every couple of years overseas for work. Local flour is ok sometimes; sometimes, I order flour from the U.S. in 50# bags. I always have to tweak whatever I up with additional gluten or diastolic malt powder with mixed results. I cannot describe how delighted I am with this flour. My baguettes are light and crispy, and flavorful. A recipe that includes oats , wheat germ, and whole wheat flour came out perfectly browned and with a wonderful oven spring for the first time in years. This flour required no tweaking and the results are the best I’ve had in years. I rarely write reviews, and I’m not devoted to many brands or products.
