It doesn't have a hard backing or a shell at all. It's made of very soft and pliable leather. You will need a hard surface to write in it other than the binding of the composition book itself.

How thic does it end up being? Could I use jump bands and turn it into a tn type cover for 7x10 journals?

Yes. It fits composition books. They are 9.75 in x 7.5 in. So your journal may be small or loose in it.

Does this fit a 9.5x6.5x1.5 Bible?

The Bible might be a little too thick. It's made for notebooks. 100 pages fit comfortably, but I would hesitate to try, say, 200 pages. It will become bulky and awkward to handle. There are better Bible specific covers out there.
