Do these rods hang from molding? Do you have to make holes in the walls

They do not hang from molding. You must put holes in the wall to use the supplied fasteners. I used their fasteners, dry wall anchors. If I had to do over I would have located the wall studs and put the screws directly into the studs. A much more secure attachment than 'hollow wall' anchors. Just my $.02 .

Is the length of the cables adjustable?

The cables included in this kit are 59" in length. If too long, you roll up the excess and hide it behind your artwork. Other cable lengths are available, the other lengths are 39", 78", 98", 118". You can contact our customer service at 805-691-9047 for customization.

Is it possible to remove the cords when nothing is hanging there?

Yes, you do not have to put the cords up if you are not wanting anything to hang there. Only add as many as you need.

It looks like the rails must slide over the mounting screws. How can you do a wall to wall rail? Or is it that you can't?

The rails snap onto the mounting clips, hence the name "Cliprail". It is recommended that you do cover the entire wall, it is more aesthetically pleasing and will appear similar to a wall molding, as opposed to a piece of rail on the wall if you don't cover the full wall. The rails are made if aluminum so are easily cut to size with a hacksaw or miter saw.
