oxo handles always degraded into a sticky mess in the past - do these do the same?

This is a known phenomenon with silicone and other similar "plastic-like" compounds, particularly those with silicone-based compounds in them. This is not unique to OXO. Certain compounds will act, literally, as a solvent on silicone and cause it to "melt." This will first be noticeable when the item starts to get a sticky or tacky feel to it - it will feel as if there's some sort of adhesive on the handle. This is caused by a chemical interaction that, if not stopped, will eventually disintegrate the handle to the point that it's a "sticky mess." This problem needs to be addressed via two avenues - how the item is cleaned and how it is stored. First, make sure that all oil, and anything that contains oil, is removed from the item. Use an oil-busting cleaner, like Dawn, and a brush to get into any nooks and crannies, scrubn the item and ensure that all oil is removed. Most importantly, rinse the item thoroughly to remove all of the detergent and any residue. You don't want the detergent residue to continue to work on the item. Next, store the item so it doesn't touch other silicone, or silicone-based materials. Certain combinations of silicone items will literally melt each other. Pure silicone, which is fairly uncommon, doesn't do this. But most "silicone" items are actually using a combination of silicone with other chemicals, and some of those combinations are incompatible with each other. I've found that good quality products like OXO can be ruined when left in contact with cheap, no-name items that have a similar feel to silicone, but actually contain a myriad of chemicals, including "stabilizers" that are actually solvents. Items from the dollar store, or cheap-o imported items from countries with few regulations on chemical compositions (I'm looking at you, China), are the most likely offenders. If you can't get rid of those items (goodness knows what they're leaching into your food), wrap your OXO in a light kitchen towel for storage in the "utensil drawer" with the other stuff. Use cotton or another natural fiber. So-called "microfiber" or "micro-filiment" is just another name for "plastic," which can be a source of the problems already mentioned. With proper care, OXO and similar products will normally have a long life and provide lots of good service. And, no, I'm not affiliated with them nor am I receiving any compensation for writing this. I just happen to have endured a few melt-downs with silicone products and, weirdly enough, Tupperware.

Does this fit inside a wide mouth canning jar?

I don't have a canning jar to try it but hopefully measurements will help. The widest part of the head is 2-1/2" by 1-3/4". You could cut a piece of cardboard that size and see if it fits easily.

Does this have a 90 degree corner on the bottom edge or is it a smooth transition so as not to cut or tear the meat?

You can't tell by the picture, but mine has a covering on it. I don't think it's Teflon, more like a hard plastic. At any rate the edges are not sharp

Does the paint come off after several use? Do I need to cover it before every use? Please & thanks!

I've used it extensively since my purchase and have not had any problems whatsoever. Unlike traditional "paint" it's a coating that's applied during manufacturing and is quite sturdy and holds up to placing it in a cabinet drawer and or holder. Feel free to be confident that it will last for many years to come.
