What specific kind of peppers are these? Prik kaleang? prik kee noo?

Translated from the label, it's a roasted ground Prik Kee Noo.

Is this more like crushed pepper flakes or finely ground (closer to powder)?

It’s not quite powder, and has some smaller flakes. But it’s closer to powder than crushed pepper flakes.

Is this Thai chili peppers?

Yes This is Thailand chili peppers.(Ground Chilli ) Product from Thailand :Brand Raitip Thank you

Does this chili have a roasted or (smoky-ish) flavor?

Definitely not a smokey flavor. When you go to a Thai restaurant and they ask you how spicy you like it, I’m sure this is what they’re using for heat. You only need to use a pinch for most recipes, I love this stuff!
