Would this work to keep the sliding door locked with a dog door panel?

Yes. You would just put the lock offset from where the door normally closes to where the door closes now with the dog panel.

Will this work on a sliding door installed backwards? When searching for a way to childproof our door I find it to be installed wrong.

yes. my sliding door was also installed backwards. you may have to make additional adjustments or modifications though.

Can this be used on a 3 sliding door system?

I could not make it work on a standard slider. So, I'm not the person to ask.
