What is the black knob for?

There are two views for this compass, one where the compass is in the palm of your hand, looking over the top where you can see the north arrow and the entirety of the compass. There's also an inner set of graduations along the side of the compass's disk. In the other view, You hold the compass up to one eye while your other eye looks out to your direction. Your two eyes then combine views so your bearing is superimposed on your view. The focus ring adjusts your view of the inner graduations.

How difficult is this to level it in the field to find North? Is there a type that is easy to level? Thanks!

It does not need to be perfectly level to work. As long as the numbers viewed through the lens can move, it will work.
