As the lentils are cooking, sautee 1 finely chopped large red onion, 1 large tomato, grate a Green Mango and add all to the cooked lentils long with salt and if needed, finely chopped fresh green serrano peppers! Add to cooked rice and enjoy! I cook 1 cup of rice with 1 cup of quinoa with four cups of water in my rice cooker and it comes out perfectly every time.
