Can i run an external mic into my dslr, and then connect hdmi from my camera to u-tap unit, then both audio & video go from u-tap to usb/computer?

Yes. I use a shure lavalier mic into external mic jack on my camera. Then, both audio and video are transmitted by hdmi cable through u-tap into my computer. Only thing you have to do on your computer interface is select u-tap as video source and again as audio source. Works like a breeze.

Does the sound remain in sync even with compressed audio coming in via hdmi?

The HDMI embedded audio/video are 99.9% sync accurate. AJA are known for top quality.

If I have two cameras do I need tow of these Captures?

You need to have a video switcher of some type to switch multiple cameras. Blackmagic's ATEM line is affordable. The U-Tap just sends the information and you cannot use 2 U-TAP's on the same system.
