Junket Rennet tablets are not sweetened or flavored and primarily used for making custard, ice cream and cheeses. Sugar and flavor can be added to your products if desired. Junket tablets are helpful for making easily digested milk foods and also for making smoother ice cream and various cheeses. Review: A necessity for making many cheeses! Keeps longer thsn liquid! - These work very well for making mozarella! Makes INCREDIBLY great cheese! If you have never made your own cheese, watch a few YouTube videos, buy some of these, some milk, acid & you'll never want to buy mozzarella cheese at the store again! I make ricotta by reheating the weigh & straining through cheese cloth & drink the weigh afterwards. You'll need some cheese salt, milk, this rennet, distilled water, a stainless or glass large pot, perhaps some oven gloves to stretch your cheese, acid to start the process & a thermometer (+ of course a heat source). If you also want to make ricotta, you'll also need some FINE cheese cloth to strain/hang up the curds, a little more cheese salt & some favprite dry or fresh herns of you like (you'll like!) You can even make mozarella over a campfire! VERY simple to use & can be kept in thr freezer for a long time! You can't keep liquid rennit as long as these! A half tablet per batch (about 2 lbs of cheese per gallon of milk, 1 mozarella, 1 ricotta, yet will vary basef on milk used, process, recipe).

## Questions & Answers

**Q: Can this junket rennet tablet be used for cheese making?**
A: Yea, I've used it to make mozzarella and feta, but I used two FULL tablets and let the coagulation step set untouched for at least 20 mins before cutting it.   Truthfully, I'd get rennet for cheesemaking from the New England place and have this on hand for emergencies or for what it was intended for like custards.

**Q: VNLA, is that short for vanilla?**
A: Probably, but I'm not sure. When I use these to make Junket Dessert (which is not sold anymore), I add raspberry flavoring, and it tastes exactly like the Raspberry Junket Dessert I used to buy. So You could taste a tablet, and if it doesn't have a vanilla flavor or enough of a vanilla flavor, you could add vanilla extract.

**Q: what is the expiration date on this item?**
A: The answer on the side of my box (under the big J) reads: June 19, 2017
