In 2006, Jonathan Carp, MD was visiting a friend in Japan when she took him to a Buddhist-run vegetarian restaurant on the outskirts of the beautiful city of Kyoto. Review: Just try them already! - I'm writing this review in the hopes of helping other people who are on the fence about trying these. After reading other people's reviews, I had no idea what to expect. Apparently, I was going to either fall in love with this noodle substitute or be completely revolted by it. Eventually I took the plunge and bought some. Here's the lowdown: - No, the noodles don't smell great when you open the package. As others have said, they have a fishy smell. No, it is not some overwhelming stench that will knock you off your feet as some people seem to insinuate. You will have to run them under cold water for a minute or two. I guess some people can't get over this smell and decide not to even try them, but that doesn't make much sense. Lots of foods don't have a good smell or appearance before prepared, yet that doesn't stop us from eating them once cooked (eggs, raw meat, etc.). After rinsing them, boil them for a few minutes, drain them, and you are ready to go. - No, these don't taste exactly like regular pasta noodles. The texture is a little different. So if you are expecting something completely identical and indistinguishable from your favorite noodle variety, you will be disappointed in that regard. - As others have said, the best way to prepare the noodles is with an Asian-type sauce. Sure, you can use alfredo sauce, spaghetti sauce, etc. if you want. No one is going to stop you. But you'll probably be comparing it to regular pasta the whole time you are eating it and feel disappointed. - How I prepare them: I rinse and cook the noodles as stated above. Then I add some frozen vegetables, which are usually a microwavable steamers variety because I'm lazy. A "stir fry" mix like bell peppers, broccoli, onions, etc. I also add a little meat. Lately I've used stir fry beef/steak that I cut up into small pieces and cook on the stove with a little olive oil. Usually I add some spices with this such as turmeric, cumin, garlic powder, paprika, chile powder, etc. For the sauce I use a 12 oz. jar of Indian sauce purchased from my regular grocery store, like tikka masala, vindaloo, etc. Usually this is between $3 to $5. A few brands that come to mind are Patak's, Seeds of Change, etc. These have less fat and calories than most pasta sauces and seem to go well with these "noodles." I usually use three packages of the noodles when I prepare a batch and then have three meals out of it. They do seem to taste even better the next day because the noodles have absorbed more of the flavor. - No, you can't just live solely off of these for the next month in an effort to drop 20 pounds or whatever. Look at the package. It is devoid of nutrients. Even with adding the other stuff as I've suggested, you are probably not going to get all the vitamins and minerals your body needs. But you can substitute these for a very low calorie meal a few times a week that leaves you full, satisfied, and without having to suffer as many hunger pains while dieting. In the last month I've lost 7 pounds. I don't attribute all of this to the noodles. They're not a "miracle" in that sense. I've been watching my calories and doing light exercise, and these noodles have helped me with low calorie meals that don't leave me starving ten minutes later.
Review: All were pretty good - This is for the Angel hair pasta only. I haven't tried the others yet. Package arrived today and was just in time for dinner. I decided to do a stir fry. On opening the box I did not smell anything . Opened the plastic bag with the pasta and did not notice a fishy odor as others have described. Rinsed it in a colander and into the wok it went. I did notice I needed more seasoning than I usually do as the pasta doesn't really have a taste. The texture seemed alright too. I will update as I try the others ( rice and fettuccine ). I'm thinking chicken noodle soup with the fettuccine. UPDATE: 9/13 Did the fettuccine in a home made chicken noodle soup. Again I did not get a fishy odor as others have reported. Rinsed in a colander and put in with the chicken and other goodies. Brought to a boil and then let simmer. Flavor was good. A little more al dente that I would have liked but definitely good. Tomorrow jambalaya with the rice. Will update. UPDATE 9/16. Well the pack of rice said 8 0z. After rinsing ( again I did not detect any odor ) and drying per the instructions I ended up wit 2.4 oz. The package nutrition label said 1 grams net carbs per 3 oz of the rice. So I am not sure what the actual carbs are in the dried product of 2.4 oz. The dried 2.4 oz comes out to a little over 1 cup dry measure. Absorbed flavor but wasn't much volume. Over all am pretty happy with all 3 items. I would cut the Angel Hair and the Fettuccine as recommended since they were a bit awkward to eat.

**Q: Has anyone tried making Mexican rice with this?**
A: It does not taste like styrofoam, what a useless response. It tastes like nothing. Has little mass or texture. It would give you the flavor, perhaps, but it is not the texture of rise. They don’t really give you much to go by on the package for drying it out before using it in a recipe - I find it makes things watery and that’s after dry cooking it for 15 minutes BEFORE then using it in a recipe.

**Q: How many people does one pkg serve?**
A: Hi, The package may describe this differently, but my experience is if you are using this as a main course, one large serving or 2 medium servings with the Angel Hair Noodles.  Not sure for the Rice type.  If you are interested in the Angel Hair, and if amazon has raised the price back up into the 20 + dollar range for 6 packages, shop around for a better price, including at vitacost.

**Q: Can you add this to rice and cook in a rice cooker?**
A: Yes, you can mix 50-50, just use a little less water than you normally would as the Miracle Rice is mostly made of water itself.

We bought these Miracle Noodles hoping they would be a great low-carb pasta substitute while following a keto diet. Unfortunately, they were a huge disappointment. We followed the cooking instructions exactly, expecting them to soften up while cooking, but they never did. The texture stayed extremely rubbery—honestly, it felt like chewing on soft plastic. No matter how much we cooked them, the texture never improved. It completely ruined the dish, which was a shame because the sauce I made for them actually turned out great. On top of that, they also don’t seem to digest very well. (Don’t ask me how I know.) Overall, we will definitely not be purchasing these again. Save your money and skip these if you’re looking for a satisfying pasta alternative. ⭐ Would not recommend!!
