Can I do probing with a periodontal probe?

Yes. It is possible to do some probing, but keep in mind that this is not the softest available gum for a model. Can I bond braces onto these teeth or are they not sturdy enough to hold them?

I haven't tried myself but they appear strong enogh. I bought for crown preparations.

How do I know that it is an authentic kilgore model and teeth?

I bought it to practice on for the dental boards. It is was a light weight version but very sturdy. The replacement teeth for the other types of kilgore typodont fit it perfectly.

Are the gums soft enough to be flexible?

Absolutely not. You can't practice going subgingivally with your instruments either.
