Once each pouch is opened shelf life is one year. **Q: which is this 1 pound a label says,5 ounds as description says for shipping wieght or is it the 10 pounds of product as the title says?** A: I bought this bucket and it is NOT 10 lbs. It weighs about 5 lbs which includes the bucket weight and the food is 1 lb 10 ounces. Wal-mart has the same inaccurate description in their website as well. **Q: What are the instructions for rehydration?** A: Boil water just like you were cooking raw vegis except they don't have to be cooked that long. Taste to test for texture and softness. Also if using within in a recipe I would re-hydrate first even though you probably don't have to.
