Organic wheat flour & water. Zero sodium. On Amazon website if you scroll down there is a nutrition summary, nutrition facts & ingredients if you click on the > sign after each category is listed. Hakubaku noodles are actually made in Australia but are the #1 top seller in Japan, whether udon, soba, somen or green tea cha soba. I've loved all those products for many years since they are made w/o salt.

These type of udon are different from regular rice udon which are thinner, so I don't think they are fatten-up as they cook.
