Great Kombu
This kombu is very good. Itโs nice and fresh - still a bit pliable and both smells and tastes great. Well, itโs dried seaweed, so it smells and tastes great for dried seaweed. The pieces are good sized and mostly from the thick part of the leaves, with a lovely chewy texture when cooked. Aside from dashi, I mostly use it for cooking beans. It gives an amazing meatless umami boost to a pot and gives the bean broth a consistency similar to what you would get from using something with a high gelatin content, like a ham shank. Makes a nice addition to a pot of rice or ramen too. Probably best to avoid using iodized salt alongside the kombu, though, unless you really need an iodine boost. When the potโs done, rinse the kombu and cut it into strips, sautรฉ it with soy sauce and mirin, then chill it down. Makes a really nice tasty cookโs treat as an accompaniment to steamed rice.

Kombu is dried kelp... like thick seaweed... what otters like to live in. It's good!
I bought this to add a bit when making short-grain white rice (like sushi rice). You just break off a bit of this (a couple square inches) and toss it into the pot (or Zojirushi rice cooker, which is what I use) with the recommended amount of water and a pinch of (non-iodized) salt. It adds a very subtle bit of umami to the rice, and is good, especially if what you're serving with it *doesn't* have a heavy sauce or gravy (i.e.: a saucy curry would be the same w/or w/o the kombu in the rice). It does not change the color or texture of the rice at all. By the way, you can just toss out the kombu after cooking the rice, though you can eat it if you want. I have, but mainly just out of curiosity and/or boredom. I think that using dried kombu in your rice maker is approved of by most otters, and since they are essentially the terriers of the sea, that's probably worth considering. ;-)

A Pantry staple for me
Great quality! I always use a piece of kombu when I make dried beans helps with digestibility and adds a lot of nutrition! Also, great for making broth. Sometimes this can be hard to find in the stores, so I am happy. Itโs readily available here.

These are fantastic in a pot of beans!
I added a sheet of seaweed in my last batch of red beans (use in Mexican/Latino food). It did not taste seaweed-y at all, and actually added a lovely depth of flavor I haven't had before. I'll definitely be adding this in stews and beans where I need more umami, and it's a great source of iodine as well.

Been cooking this with my beans only so far (plan on using it in soups and such) but it adds such a delightful depth of flavour and an indescribable texture that I love (I chop it up in the dish and eat it after it has cooked). 12/10 I plan to buy again.
