what does 18/10 mean ?

Is 18/10 stamped in all silverware?

No, all silverware is stamped with "STAINLESS STEEL" without "18/10" stamped as well.

What does the backside of the silverware look like?

If it's not stamped 18/10 stainless then it isn't 18/10. This is a red flag as far as I'm concerned.

What's going on with the thick 3mm knives. Very hard to cut meat even chicken or burger. Cannot use? Has this problem been corrected ?

I never use the knives that come with the set unless it’s for soft items, such as butter, cooked veggies etc , I use steak knives for meats and tougher foods
