Although Carne Seca does not have gluten as ingredient, it is processed in a facility that shares the ventilation system with others, which does not guarantee that it is gluten-free.

This product is dry, according to the regulations of United States Department of Agriculture, the Canadian Food Inspection Agency, and the Ministry of Agriculture of Brazil, as its water activity is below 0.82.

Lead Foods is a manufacturer in Canada that sells in the United States Carne Seca with same authentic flavour as the product sold in Brazil, being considered a better product, as its moisture content is lower than the Brazilian product, and its shelf life unrefrigerated is longer (4 months in the Brazilian product, 18 months in the Canadian version).

Carne Seca Lead Foods is considered dry in compliance with CFIA and USDA regulations, which makes our product non-refrigerated. Carne Seca is considered salty, as per declared sodium levels on the Nutritional Facts Table (back label), also available on our website leadfoods.com. In terms of consistency, it is harder than fresh beef, however hardness test has never been performed to our product. Carne Seca Lead Foods is also known as Charque or Jabá, and is  often used in Feijoada, Feijão Carioca, Escondidinho de Charque, Arrumadinho, Quiabada de Charque, and in many Brazilian recipes. Water declared on the ingredient list is water used in the manufacturing process. There might be fluid in the package, released from the meat by the vacuum pressure after the product was vacuum packaged. On the other hand, Carne de Sol is just fresh beef, overly salted, and needs to be refrigerated, as it is not considered dry.
